Spaghetti Squash – Tis the season for delicious gourds! The stringy innards of this squash may seem unappealing at first, but they can actually make a delicious and nutrient-rich alternative in any noodle-based dish. If you have a sensitivity for gluten, or just want to balance out your diet a bit more, consider embracing vitamin C-rich spaghetti squash.
